1 tablespoon
olive oil
1 large
onion, chopped
2 cloves
minced garlic
2 teaspoons
grated fresh ginger
1 green Chile
pepper, chopped
1 tablespoon
ground cumin
2 teaspoons
paprika
1 teaspoon
ground coriander
1 teaspoon
garam masala
1 teaspoon
ground turmeric
1/2 teaspoon
ground cayenne pepper
4 cups
chopped tomatoes
4 cups cooked
chickpeas (garbanzo beans)
1/2 cup
tomato sauce
1 lemon,
juiced
Salt to taste
1 teaspoon of
Aamchur Powder
Method:
·
Add salt to taste while boiling
chickpeas or Chana.
·
Heat olive or refined oil in a
large saucepan over medium heat.
·
Deep fry sliced/chopped onions,
garlic, ginger and green Chile into the hot oil until the onions turn golden
brown in color, about 10 minutes.
·
Stir the onion mixture after adding cumin, paprika, coriander, garam
masala, turmeric, and cayenne pepper. Cook the onion with spices for at least 5
minutes.
·
Add tomatoes, chickpeas, and tomato sauce; stir and simmer until the
tomatoes soften, about 5 minutes.
·
Add water in the mixture and
make a thick check the consistency of the gravy. If the gravy is watery and thin then let it
simmer for few minutes.

Add Aamchur powder and mix
well.
Garnish it
with coriander leaves. Serve hot and

Chicken Tikka

2 tsp garlic ginger paste

2 tsp spice mix powder
·
1 Tbsp tandoori masala powder
·
1/2 tsp salt

1 1/2 Tbsp tomato
·
15 oz curry base
·
3 Tbsp coconut powder
·
1 Tbsp almond flour
·
1 Tbsp brown sugar
·
1/4 cup whipping cream
·
Lemon juice
METHOD
For Chicken
·
Pre-heat oven to 200°C.
·
Mix 2 tbsp tandoori masala
powder, salt and 3-4 tbsp of vegetable oil in a bowl.
·
Cut the chicken into big bite-size
pieces and marinate it with the spice mixture.
·
Let stand briefly or put it in
your refrigerator for up to 4 hrs.
·
Now, roast the chicken until it
reaches an internal temperature of about 80°C or, about 15 minutes.
For Masala
·
Mix the spice mix powder,
tandoori masala and salt in a bowl.
·
Now, combine the almond and
coconut powder with water to get the texture of coconut milk or cream.
·
To get the consistency of
tomato passata, dilute the tomato paste with enough water.
·
Heat the frying pan, add 3tbsp
oil.
·
Add, garlic paste and stir it
for a few minutes.
·
Turn down the flame and now add
the spice mix, we have prepared earlier. This is a critical step so, you will
have to stir it constantly for 30 seconds.

Turn the heat up and now add
the diluted tomato puree and stir it until bubbles form.
·
Add 3 oz. of curry base and
stir briefly.
·
After a minute add 6 oz. curry
base and again stir it for a few minutes. And then lastly, add the rest of the
curry base and let cook until the bubbles form.
·
Add pre-cooked chicken, coconut
almond mixture and sugar.
·
Now, let the curry simmer for
about 5 minutes.
·
Add the cream and stir it, mix
the lemon juice and garnish with freshly chopped coriander.
